Australian BBQ Recipes: Herb Butter Steak

The main sauce in this delicious recipe is a lovely thing called herb butter, which is also very easy to make. A little bit of herb butter is a handy thing to have in the fridge or freezer, as it keeps well and has many versatile uses. Bring a simple piece of tender steak, fish or chicken to life, whether you cook them on the grill, broiler or in a skillet.

Serves: 4 – 6

Preparation time: 20 minutes

Cooking time: 10 minutes

Main ingredient: beef

Ingredients

4 Piece(s) Thick Steak

250 Gm Softened Butter

2 tablespoons finely chopped fresh parsley

2 tablespoons finely chopped fresh basil

2 tablespoons finely chopped fresh chives

2 tablespoons finely chopped fresh coriander

1/2 tablespoon tomato paste

4 Drop(s) Fish Sauce

MasterFoods Sea Salt To taste

Freshly ground pepper to taste

cooking instructions:

Place all ingredients except the steak in a food processor and blend well, or simply use a bowl and blend with the back of a fork.

Place on a sheet of plastic wrap and roll into a sausage the diameter of a twenty-cent piece, twisting the ends to seal.

Chill in the fridge until firm.

Heat the barbecue over medium heat and lightly oil.

Cook the steak to your liking.

Cover loosely with foil and rest in a warm place for a couple of minutes. (Leftover butter can be kept in the fridge or freezer)

Place the steak on a hot plate and top with a slice of herb butter. The butter will melt to coat the meat and your delicious meal is ready.
